Chef Sidney


True Flavors Diner official opened in 2014 but was envisioned by Executive Chef/Founder Sidney Coves in May 2004 with the opening of True Flavors Catering Company in Durham, North Carolina. With the success of True Flavors Catering Company, the dream of True Flavors Diner was realized.

Chef Sidney trained at Johnson & Wales University in Norfolk, VA, earning a degree in Culinary Arts.  In the decade that followed, Chef Sidney apprenticed at Boardwalk Resort & Villas in Virginia Beach, VA and Antiquities in Norfolk, VA before settling in Durham NC.

True Flavors began and continues with Chef Sidney’s hearty, creative and flavorful cuisine as its centerpiece. As Executive Chef at True Flavors Diner, Chef Sidney prepares the restaurant’s signature southern dishes daily, introducing innovative approaches to American favorites.
